Career Growth Hospitality Recruitment are seeking a talented and passionate Pastry Sous Chef for a modern hospitality property located in the heart of Sandton, Johannesburg. This vibrant hotel offers a dynamic food and beverage environment with multiple outlets, events, and conference facilities, making it an exciting workplace for culinary professionals.
This role is ideal for a pastry chef who enjoys creativity, precision, and working in a fast-paced kitchen environment while maintaining high-quality standards across desserts, pastries, and baked goods.
The successful candidate will support the Executive Chef in leading the pastry section while ensuring consistency, quality, and efficiency across all pastry production.
Key Responsibilities
The Pastry Sous Chef will be responsible for overseeing pastry production and supporting the culinary team, including:

Assisting the Executive Chef with the daily operations of the pastry kitchen.

Preparing and overseeing the production of desserts, pastries, breads, and baked goods for the restaurant, banqueting, and conference functions.

Ensuring all pastry items are produced to high presentation and quality standards.

Developing and contributing to new dessert menus and seasonal offerings.

Managing pastry section staff, including training, supervision, and performance guidance.

Monitoring food quality, portion control, and consistency across all pastry items.

Assisting with stock management, ordering, and inventory control for pastry ingredients and supplies.

Ensuring proper food safety, hygiene, and kitchen cleanliness standards are maintained at all times.

Supporting the culinary team during large functions, conferences, and special events.

Controlling wastage and food cost within the pastry section.

Maintaining organised pastry preparation areas and ensuring equipment is properly used and maintained.
Requirements

Previous experience as a Pastry Sous Chef or Senior Pastry Chef in a hotel, resort, or high-volume kitchen.

Strong knowledge of pastry techniques, dessert plating, and baking methods.

Experience working with banqueting and conference catering environments is advantageous.

Ability to work in a fast-paced kitchen while maintaining high standards.
