We’re looking for a strong Executive Sous Chef to support the Executive Chef in leading a full brigade while maintaining exceptional food standards across conferencing and a la carte outlets. This is a hands-on leadership role for someone who thrives in a fast-paced service environment.
What You’ll Do
• Lead and manage a full kitchen brigade
• Maintain high food standards across all food outlets including conferencing and a la carte
• Run the pass with confidence ensuring consistency, presentation and timing
• Train and mentor junior chefs and trainees
• Support menu creation, recipe development and food costings
• Manage stock takes, ordering and cost control
• Uphold strict hygiene and food safety standards
• Step into full operational responsibility in the absence of the Executive Chef
• Engage with guests and support a strong service culture
What You’ll Need
• Proven experience as a Sous Chef in a 4 or 5-star hotel environment
• Strong background in busy conferencing and a la carte service
• Experience leading and motivating a brigade
• Solid understanding of food cost control and stock management
• Confident leadership style with a hands-on approach
• Ability to work a variety of shifts
