Career Growth Hospitality Recruitment are seeking a Cost Controller for a leading, modern hospitality property located in the heart of Cape Town’s city centre. This vibrant hotel is known for its contemporary design, high-energy atmosphere, multiple food and beverage outlets, and strong focus on operational excellence.
This is an exciting opportunity for a financially minded hospitality professional who enjoys working closely with kitchen, restaurant, and purchasing teams to ensure accurate cost control, inventory management, and financial efficiency across the property.
The successful candidate will play an important role in maintaining strong financial controls while supporting the operational departments to maximise profitability and maintain high standards.
Key Responsibilities
The Cost Controller will be responsible for overseeing and managing all aspects of food, beverage, and operational cost control within the hotel, including:

Monitoring and controlling food and beverage costs, ensuring accurate cost percentages are maintained across all outlets.

Conducting daily, weekly, and monthly stock counts for food, beverage, and operating supplies.

Reconciling stock variances and investigating discrepancies between physical counts and system records.

Maintaining accurate inventory control systems and ensuring all stock movements are correctly recorded.

Working closely with the Executive Chef, Restaurant Managers, and Purchasing teams to monitor usage, wastage, and portion control.

Verifying supplier invoices and ensuring all deliveries correspond with purchase orders and goods received notes.

Ensuring all purchases follow approved procurement procedures and pricing agreements.

Preparing and analysing cost reports, including food cost percentages, beverage cost analysis, and monthly consumption reports.

Identifying areas where cost savings and operational efficiencies can be achieved.

Monitoring menu costings and assisting with the pricing and profitability analysis of menu items.

Ensuring proper storage procedures and stock rotation practices are maintained throughout the kitchen and stores.

Supporting finance and management with monthly financial reporting and budgeting processes.

Ensuring compliance with internal financial controls, audit requirements, and company policies.

Assisting in maintaining accurate POS and inventory system integration between operational departments and finance.
Requirements
-
Previous experience as a Cost Controller or Cost Analyst within a hotel, resort, or hospitality environment.

Strong knowledge of food and beverage cost control procedures.

Experience working with inventory and stock management systems.

Good understanding of purchasing, receiving, and stock control processes.

Strong analytical and reporting skills with attention to detail.

Ability to work closely with operational teams such as kitchens, restaurants, and stores.

Good communication and organisational skills.
-
Hospitality financial systems and POS knowledge will be advantageous.
